Mild, sweet, and elegantly aromatic, leeks are a beloved Mediterranean allium that deliver a gentle onion-like flavor without the sharpness of raw onion or garlic. A staple of French, Greek, and broader Mediterranean cuisines, leeks add subtle depth and silky texture to soups, braises, grain dishes, tarts, and sautéed vegetable preparations. When cooked slowly in olive oil or butter, leeks become meltingly tender and develop a natural sweetness that pairs beautifully with lemon, herbs, feta, and white wine. Use the white and light green parts for cooking; the dark green tops can be reserved for stocks. Rich in vitamin K, vitamin A, folate, manganese, and prebiotic fructooligosaccharides that support gut health and immune function, leeks are as nutritious as they are flavorful. Store refrigerated unwashed and use within 1–2 weeks.
